Steamed Halibut with Chili Lime Dressing  

Steamed Halibut

Ingredients

  • 10 oz Halibut Filet (or other white fish)
  • 2 ea Roma Tomato, 1/8“ slice
  • 1 ea Japanese Cucumber, 1/8“ slice
  • 3 oz Chili Lime Dressing
  • 1 Tb Mint, rough chop
  • 1 Tb Thai Basil, rough chop
  • 1 Tb Cilantro, rough chop
  • 2 Tb *Fried Shallots (1/8“ slice fresh shallots, deep fry at 350° till golden brown)
  • 1 Tb *Pickled Red Chilies, minced (optional)

Chili Lime Dressing

Ingredients

  • Juice of 2 limes
  • 1/2 tsp Kosher Salt
  • 2 tsp Sugar
  • 1/2 tsp Oyster Sauce
  • 1/4 tsp Minced Garlic
  • 1/4 tsp Minced Ginger
  • 1/4 tsp *Sriracha Chili Sauce (or Substitute 1/8 tsp Tabasco)

Dressing Procedure

Place all ingredients in blender and puree till smooth.

Procedure

  1. Steam Fish Fillet for 9-11 minutes.
  2. Fan out Tomato & Cucumber slices in a circle on a Dan-Dan Bowl.
  3. Place steamed Fish on top of Tomatoes & Cucumbers.
  4. Drizzle Chili Lime Dressing over fish.
  5. Sprinkle herbs over entire dish.
  6. Sprinkle Fried Shallots over entire dish.
  7. Sprinkle Pickled Red Chilies over entire dish.
