Imperial black cod

Imperial Black Cod

Ingredients

  • 8 Oz Black Cod ½ inch dice
  • ½ tsp Shaoxing Wine (can substitute Sake or Sherry)
  • ½ tsp Cornstarch
  • 1 tsp Vegetable Oil
  • ½ tsp Sesame Oil
  • ½ tsp Garlic, minced
  • ½ Oz Red Bells Peppers, ¼ inch dice
  • 3 Oz Soybeans, shelled (can substitute Fava Beans)
  • 2 Fl. Oz Abalone Sauce(can substitute oyster sauce)
  • 3 Tb Toasted Pine Nuts
  • 1½ Oz Shiitake Mushrooms ¼ inch dice (can substitute other mushrooms)
  • Kosher Salt to Taste

Directions

  1. Bring small pot of water to a boil then add Kosher Salt to taste.
  2. Add Soybeans and simmer very slowly for 20 minutes.
  3. Drain and then set aside.
  4. Meanwhile ½ inch dice the Black Cod and mix with Wine and Cornstarch
  5. Heat a hot until smoking than add Vegetable Oil and Sesame Oil.
  6. Add Garlic and Black Cod and gently stir fry briefly (approx 20 -30 seconds).
  7. Add Red Bell Peppers, Black Mushrooms and Soybeans then stir-fry briefly until all ingredients are warm (approx 20 to 30 seconds).
  8. Add Abalone Sauce and Pine Nuts then toss quickly and serve immediately.
