Here is a easy a easy recipe I do at home for a quick meal.
It's simple, fast (approx. 20 minutes) and absolutely delicious.
Because it really highlights the fish.
Honey Glazed Black Cod
Ingredients
2 ea 4 oz filets of Black Cod Filet, skinless
½ tsp Dark Soy
1 tsp Honey
½ tsp Olive Oil
½ cup Greens, finely chopped (such as pea sprouts, mizuna, spinach, gai lan)
1 tsp Shallots, minced
1 pinch Kosher Salt
10 -12 pcs Fine Julienne Ginger
2 Tb Soy Sauce
Juice of 1/8th of a Lemon
1 Tb Normandy Butter, unsalted (or substitute with Challenge brand)
Directions
Mix the fish with the Dark Soy and let marinade 5-10 minutes.
Meanwhile:
Chop the Greens
Mince the Shallots
Julienne the ginger
Cut off a 1/8th wedge of lemon
Set them all aside.
Pre-heat broiler to 350°F.
Drain marinade from the Fish.
With a paper towel pat dry the Fish.
Add honey to the fish and mix well.
Place fish in a non-stick sauté pan.
Place pan into broiler for 3 minutes.
Check fish every minute thereafter until Fish is done and has a caramelized coating.
Meanwhile:
In a sauté pan over medium heat, sauté the Shallots lightly with Olive Oil.
Add the Greens and Kosher Salt and cook until greens are just done.
Mound onto center of plate.
In a dry sauté pan over medium heat, cook the ginger until it starts to brown.
Immediately add Soy Sauce, Lemon Juice and then the Butter.
Heat through until the Butter melts, then set it aside.
Place Fish on top of Greens.
Drizzle some sauce over the Fish and some around the plate.
