Harbin Braised Beef Short Ribs  

Ingredients

  • 3 lbs Beef Short Ribs (2”x 2“ pieces)
  • 1 pt & 4 oz Harbin Beer (or you can substitute an English lager)
  • 4 oz Soy Sauce
  • 1 oz Dark Soy
  • 3 cups Water
  • 6 ea Greens Onions
  • 1 pc Ginger (1” x 1” piece, sliced)
  • 2 ea Garlic Clove, bruised
  • 2 ea Star Anise
  • 1 Tb Hot Broad Bean Sauce
  • ½ tsp Five Spice Powder
  • 1 cup Carrot, ½” dice
  • 1 cup Daikon, ½” dice (sub potato or parsnip)

Directions

  1. Place Short Ribs, Harbin Beer, Soy Sauce, Dark Soy and Water into a pot and bring to a simmer.
  2. Simmer for 5 minutes and skim off any foam.
  3. Place Scallions, Ginger, Garlic and Star Anise on a piece of cheesecloth, tie cheesecloth into a pouch with butcher twine, then place into pot.
  4. Add Hot Broad Bean Sauce and Five Spice to pot and slow simmer covered for 2 ½ hours.
  5. Turn Short Ribs over and skim off excess fat every 30 minutes.
  6. Add Carrots and Daikon then simmer for another 15 minutes.
  7. Remove cheesecloth and serve.
