Shrimp Salad

Ingredients per serving:

  • 1 cup Iceberg Lettuce
  • 2 Cups Spring Mix
  • 1 Cup Frissee
  • 1 Tbspn Herb Mix**
  • Pinch of Salt
  • Pinch of Pepper
  • 5oz. Grilled Shrimp
  • 1 Cup 3/4" - 1" Watermelon Cubes
  • 1 Tbspn Candied Walnuts, chopped
  • 1/4 Cup Bikini Dressing
  • 1/4 oz. Chopped Scallions
  • Equal parts Cilantro, Mint and Basil 1/4" Chop

Dressing

  • Fresh Orange Juice 2 Tbspn.
  • Fresh Lemon Juice ½ Tbspn.
  • Honey 1 tsp.
  • Dijon Mustard ½ tsp
  • Kosher Salt 1/8 tsp
  • Extra Virgin Olive Oil 2 Tbspn.

PROCEDURE:

  1. In a mixing bowl, combine lettuces, salt & pepper and cooked shrimp. Toss.
  2. Add dressing (shaken well), watermelon and candied walnuts.
  3. Mound in the center of a plate.
  4. Garnish with the remaining candied walnuts and scallions.

Mix all ingredients well. They will separate, so mix before adding to the salad.
